We are getting ready for the Thanksgiving Holiday and wanted to share with you some of the things that go into the preparation of the holiday’s menu items.
For starters, we use Fresh Empire Turkeys and Turkey Breast, that we brine overnight to keep them delicious and juicy. The brine is a mixture of orange juice, lemon juice, kosher salt, bay leaves, brown sugar, and pickling spice. After the Turkeys are brined we dry them off, and put fresh cut vegetables in the cavity.
